Not to be confused as a cultivar itself, rainbow chard is comprised of other colored varieties resulting in an array of colorful delicious greens. Fresh young chard may be used raw in salads as more mature plants become slightly bitter such as spinach; the bitterness fades with cooking, leaving a refined flavor which is more delicate than that of other greens. Chard is a biennial usually sown between June and October, depending on when you wish to harvest. Harvesting can be a continuous processes some plants producing several crops.
