Name: Black Beauty Eggplant

One of the most popular Eggplant variety today, was introduced in the early 1900’s. This plant can grow 3 to 4 feet tall, and will bear fruit that are a dark rich purple which appears almost black. These tasty fruit usually get about 6” long at most, and usually have a rounded shape. The flesh is cotton white, tender yet firm and can be prepared in an assortment of delicious ways.

Growing Instructions:
Start inside 8 weeks before the average last frost, then transplant outside after threat of frost has passed and when outside nighttime temperatures are at least
55°F. Before planting in the garden, seedling plants should be acclimated to outdoor conditions, this can be done by placing the seedlings in a sheltered place outside for a week; Protecting them from wind, the hot sun, and frost.
Give the Plants about 16” of space in the full sun after they’ve been acclimated to the outdoor conditions. Keep the plants well watered throughout the growing season, paying special attention during dry spells.
Harvest the eggplants when they get close to 6” long, usually close to 75 days later. Look for firm fruits, that are still have a glossy shine. Dulling skin is a sign that the eggplant is overripe, usually still ediable however fruit may have a bitter flavor.
