Florence fennel is smaller than its wild counterpart, yet still contains that mild anise-like flavor only sweeter and more aromatic. Just about every part of the plant can be enjoyed or used in the kitchen, including the bulb that forms at the base. The stalks can be used as celery substitute, and even the seeds can be used to flavor meats or teas. Fennel is also enjoyed and used as a host plant for black swallowtail butterflies.
